What is Sour Milk

Ever wondered what happened to fresh Milk in the good old days. Yes, it can be churn into butter and buttermilk. One of the less known usages was to let it become sour and consume it. This naturally sours Milk could be consumed harmlessly. It was not rotten.

When lactose (which is sweet) in the Milk is converted into lactic acid, the Milk becomes sour in taste. It is called sour Milk. The transformation could be natural or induced by artificial means such as acetic acid and vinegar. It is consumed in many countries such as countries in Eastern Europe, erstwhile Yugoslavia and Russia. 

Milk left for a day along a heat source such as an oven would cause the Milk to turn sour. In the pre-refrigeration era, it was a very standard drink and had multiple usages in various recipes. 

Ayurveda treats Milk with a lot of reverence and considers it an excellent source of Ojas, which is the pure substance produced from the subtlest of the digestive system. Ojas improves overall immunity and strengthens the whole system.

However Ayurvedic tradition looks down on consumption of sour Milk. It prefers Milk consumed warm added with a pinch of turmeric or a pinch of ground black pepper.

Benefits of Sour Milk

What use do we make off sour Milk in the modern world? Here are a few.

  1. Add sour Milk to soups. The addition would make the soup thicker and creamier.
  2. Next time preparing Malai Paneer, mix bit of sour Milk to the gravy instead of water. The preparation would have a richer taste. Add it to the gravy of any other preparation Veg or non Veg for similar results.
  3. How about some homemade cheese, sour Milk could be a starting ingredient for the preparation of the cheese.
  4. Sour Milk has skin cleansing properties. It makes skin smoother and better looking.
  5. It could be used for dressing a salad.
  6.  Finally, your pet won’t mind consuming it, if mixed with his daily food.

It can be used as a substitute for buttermilk or sour cream, which will keep the taste and creamy flavor intact. It can mainly be used in bread and dessert recipes. It is acidic in nature, reacts with the baking soda, and makes the cakes and bread, fluffy. Here are some recipes that you could make using sour Milk.

Sour Milk and Skin

Rubbing it to the skin would make it smoother and lighter. In ancient times queens like Cleopatra were supposed to take a bath in milk to keep their skin supple and light. After all, she had to conquer the hearts of the likes of Caesar and Antony. 

We lesser mortals can add a few cups of sour Milk to our bathtubs for slightly similar results. More of the Milk rather less of it would have better results.

Sour Milk for Skin Lightening:

It contains lactic acid, which has skin lightening properties. It can be rubbed on the face to reduce tan. And in countries like India where a lighter skin carries a lot of weight in the matrimonial market, sour Milk is a readily available face cleaning product.

Sour Milk for Dry Skin

Mix sour milk with half a banana and honey, Apply the paste on the face for 10-15 minutes, rinse it with warm water. Skin tone will show a better texture and feel.

Sour Cream face mask

This face mask should be applied to lighten the skin color or to exfoliate the skin. Mask can be readily prepared at home with parsley and cucumber mixed and added to the sour Milk. 

The pack would cleanse the skin by removing dead cells.

Sour milk facial

Sour Milk contains probiotics and enzymes. Rubbing it on the face for 10-15 minutes, would cleanse the skin of dirt and impurities and would add glow and luster to it.

Recipes with sour Milk

Sour Milk can be used in several delicacies. It can be used as a substitute for buttermilk or sour cream, which will keep the taste and creamy flavor intact. Here are some recipes that you could make using sour Milk.

Sour Milk and Bread

Ingredients:

  • Sour Milk 3 and ¼ tbsp.
  • Flour, ¼ cup
  • Yeast, ¼ tsp.
  • Sugar, 1-1/4 tsp.
  • Salt to taste.
  1. Mix all the ingredients
  2. Put it in a pan and bake 
  3.  Serve when cold.

Corn Bread

  • 2 Eggs
  • Sour Milk 2 Cups
  • Cornmeal 200 grams
  • Flour ¼ cup
  • Soda 1 tbsp.
  • Salt ¼ tsp
  • Tartar Cream ¼ tsp
  • Melted Shortening ¼ cup

Beat the eggs, mix salt and sugar

  1. Add Milk, soda tartar cream, cornmeal and flour to the mixture.
  2. Bake for 35 minutes

Your corn bread is ready.

Sour Milk in cake Recipes

Ingredients:

  • Sour Milk, 2 cups
  •  Flour, 3 cups
  • Eggs 2 
  • Cocoa, ½ cup
  • Sugar 2 cups
  • Baking soda 2 tsp.
  • Shortening, ½ cup (  Desi Ghee, Butter)
  • Vanilla essence

 How to prepare:

  • The first step would be to blend shortening with sugar.
  •  Mix cocoa, soda, flour, sour Milk

OPTION 2: Chocolate Muffins

Ingredients:

  • Sour Milk 2 cups
  • Flour 2 cups
  • Cocoa powder ½ cups
  • Eggs 2
  • Sugar, ¾ cup
  • Vanilla Extract, 1 tsp.
  • Oil, 1/3 Cup
  • Espresso Powder, 1 tbsp.
  • Baking Soda, ½ tsp.
  • Baking Powder, 2 tsp.
  • Beat the eggs and mix sugar with it, Mix all the dry ingredients.
  • Mix the oil, vanilla and sour Milk in the egg mixture. 
  • Mix them all together add chocolate chips. 
  • Oil the Pan, spray some flour 
  • Bake it for 45 Minutes at 350 F

Sour Milk for weight loss

Sour Milk lowers blood cholesterol. It prevents damage to the cardiovascular system and improves overall immunity. It contains all the necessary ingredients viz. proteins, carbohydrates, and fats. It improves the functioning of intestines that have been impaired by spoilage of Proteolytic bacteria.

If Soured milk diet is continued for up to 10 days, it can reduce weight by up to 5-6 Kgs. 

Diet

Consume up to 500 ml. of sour Milk, 300 grams of fruits (avoid grapes and melons), 100 grams of meat, 300 grams of Vegetables (radish, tomato, cucumber, etc.), and another 300 grams of green vegetables per day.

Diet is pretty flexible once the consumption is limited to the amount mentioned.  

The important thing is that you are replacing your grain intake (rice and wheat) by sour milk intake. It would reduce calorie consumption on the one hand and improve metabolic function on the other. This double whammy will have the desired effect on your excessive weight piled over time. 

 However, a word of caution, do not try it for more than 14 days at a go. 

 Sour Milk vs. Yogurt

The bacteria used for Sour Milk are different from those used for the preparation of Yogurt. The two have different tastes and properties. While flavored Yogurt is consumed pretty much everywhere, sour Milk is its poorer cousin as far as taste and acceptability are concerned.
